Possibly the most popular herb grown in cooler areas, but also
one of the most 'failed' herbs. There are two reasons for this - firstly parsley
is not so quick or easy to germinate as many other herbs. Secondly, it does
require a reasonably rich soil to perform well.
Once growing well in a good soil, it is however a low maintenance plant. It's
leaves are attractive, it can be used both as an attractive garnish and a
flavoring for many foods - there are not many people who turn their noses up at
a fresh sprig or two of parsley topping a boiled cod steak!
Parsley especially amongst herbs, can be appreciated at it's most flavorsome
when picked fresh from your garden.

Did you know that Parsley is an easy to grow vegetable? That's right, a
vegetable! Almost everyone thinks of it as a herb. We suggest you grow it in a
flower garden near the house, or a container, especially if your garden space is
limited. By planting it near your house, you can quickly harvest some for
cooking, and it will continue to grow well into the fall months.
As a herb, parsley has a mild flavor which is used in a wide variety of recipes.
It also is an important garnish, decorating many types of trays and dishes. Kids
seem to like to take Parsley garnish and munch on it.
Did you Know? Hamburg Parsley is grown for it's long root to flavor soups and
stews. It is an excellent source of vitamins A,C, calcium and iron.
Try growing this herb in a sunny window and enjoy it fresh all winter. We do!
Growing Parsley:
While Parsley is a biennial, it is often grown as an annual, especially in
colder climates.
It can be started indoors or out. We suggest you sow these tiny seeds indoors,
and let them grow for a few weeks prior to planting outdoors. They transplant
easily and transplanting affords easy spacing.
Sow seeds thinly. The seeds are so fine you can sow on top of the soil and just
water them in. Germination can take two weeks. Young plants will grow slowly,
but steadily.
Parsley can thrive in partly shady, and even shady areas. Soil should be rich.
This easy to grow herb tolerates poor soil and poor drainage, so it can be put
in areas of the garden that other plants do not like.
Harvesting Parsley:
Begin to pick parsley as soon as the leaves begin to curl and are of sufficient
size for your recipe. For best flavor of this mild herb, pick early in the day
when the oils are the strongest.
Insects and Pests:
Aphids will infrequently enjoy a meal of your parsley. Aphids have far too many
other flowers and vegetables that they prefer much more.
We recommend tolerating the occasional infestation, rather than using
insecticides.
Hardiness:
Parsley is very hardy. Parsley that has wintered over in your garden will begin
their growth with the first rays of sun in the spring . New growth begins
shortly after the snow has melted. You will be harvesting the leaves late into
the fall.
Other Uses:
Ancient Romans used sprigs of parsley as garlands on their crowns.
VARIETIES
The most common variety is the common or curly parsley, Petroselinium crispum.
These curly types are quite versatile, typically growing 8-14 inches tall,
forming dense clumps which are great for borders or inter- planting in the
garden beds, not to mention growing in containers. There are also several curly
dwarf varieties available.
Italian parsley, P. neapolitanum is another popular variety. This plant can grow
quite tall (2-3 ft) and is more gangly in habit. The flat serrated leaves have a
much stronger and sweeter flavor than the other varieties, making it more
desirable for cooking.
Hamburg parsley, P. tuberosum, is mainly grown for its white fleshy parsnip-like
roots which are used in flavoring soups. Tall, fern like leaves make up the
foliage.
Japanese parsley, Cryptotaenia japonica, resembles the Italian parsley but is
not commonly grown. It has a more of a bitter taste and is used more often in
oriental cooking.
